Pumpkin Energy Balls

  • Food Processor

Ingredients
  

  • 1 cup dates
  • 1 cup pecans
  • 1/2 cup pumpkin seeds
  • 1/3 cup pumpkin puree
  • 2 tbsp ground flax
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp pumpkin pie spice
  • 1 pinch salt

Instructions
 

  • Soak the dates in warm water for about 10 minutes.
  • While dates are soaking, add pecans and pumpkin seeds to the food processor and process until ground fine.
  • Drain water off the dates and add dates to food processor.
  • Add all other ingredients to food processor and pulse until blended smooth.
  • Transfer to a container and refrigerate until cold. (Or use the freezer to speed the process up!)
  • Remove from refrigerator and form into balls.
  • Store energy balls in refrigerator or freezer.
